RiverBend Lodge has access to Intsomi Game Camp, which is now owned by international fruit marketing and production company - San Miguel, which has it's Headquarters in Argentina. There is a very different game 'profile' on Intsomi with many species found on the property which are not on RiverBend. Among these species are Giraffe, Bontebok, Wildebeest and Nyala.
Whilst staying at RiverBend you can arrange with your Guide to take you on a either a Drive or a Walk!

Lemon Syrup Recipe

We have had numerous requests for the recipe to make our Lemon Syrup which is enjoyed by all Guests at RiverBend Lodge at sometime during their stay. Well here it is:

LEMON SYRUP

1 lt Freshly Squeezed Lemon juice

1.5 lts water

200gms sugar

1 Table spoon Epsom salts

1 Table spoon Tartaric acid

1 Table spoon Citric acid

Method:

Boil water and sugar, remove from heat once sugar hasdissolved, add Lemon juice and other ingredients. Stir until everything isdissolved. Cool, bottle and refrigerate.

To serve - 1 part Lemon Syrup to 3 parts iced water or to taste. Garnish with a slice of Lemon and a sprig of Mint. It has been known to be enjoyed with a tot of Vodka added ....called A Gorbachov Cocktail!

Something else that is proving to be really popular from our Kitchen at RiverBend is Chef jonathan Hodders Curried Monkfish with Onion Bhaji.

Eastern Red - Footed Kestrel (Falco amurensis)

We recently posted that we were expecting more summer avian migrants.....the Eastern Red - Footed Kestrels are here, and indeed, all over the Eastern Cape......remarkable birds!!

These Raptors (also known as Amur Falcons) "perform the most extraordinary migration of any raptor occurring in Africa: from it's breeding grounds in Eastern Asia via India across the Indian Ocean (over 3 000 kms of open ocean) to Eastern Africa and on to Southern Africa, where it spends the Southern Summer. Far migrating birds are considered good eating by some African communities. Gregarious at all times, often perching on telephone wires or fences."

"Breeding: Breeds in Eastern Siberia, Mongolia, Northern China and Korea. Uses the tree nests of mostly ravens and magpies. May breed in loose colonies"

We have been promising images of a Steppe Buzzard (Buteo vulpinus).....at last we have some.
Steppe Buzzards arrive late in October or early November and depart again between February and April. Some migrants to look forward to in the coming months are European Rollers and Amur Kestrels. We will (hopefully) get some images of these visitors to post on this Blog.

Reflections on Africa's Elephant by Martin Meredith

After readingAfrica’s Elephant – pictured above…..I dwelt on two paragraphs, which relatedspecifically to the Cape Province and, more specifically, Addo, in the EasternCape.

Elephantshave been subjected to “periods of brutality and persecution” yet weredescribed by poet John Donne as “Nature’sgreat masterpiece, the only harmless great thing”.

“By 1760 Elephants could no longer be foundsouth of the Oliphants River on the western coast of the Cape Colony; on theeastern coast the nearest Elephant strongholds lay 500 miles distant from CapeTown. They remained plentiful in the eastern frontier region for a short whilelonger. A travelling Swedish scientist, Anders Sparrman, referred in 1775 to incrediblenumbers there. A government official in 1797 reported a herd 400 strong. But by1830, when Elephant hunting in the Cape Colony was banned, only two small herdswere left in the Eastern Cape, one hidden deep in the Knysna forest and theother in the Addo bush country. Out of a herd once estimated at 25 000 (somebelieve more), no more than a few 100 survived. It was the first massextinction since Roman times.” Page 62 Africa’s Elephant

“The survival of the few remaining Elephantherds in South Africa was still precarious, however. When the small herd inAddo in the Eastern Cape, forty miles from Port Elizabeth, began raiding citruscrops on neighbouring farms, the authorities ordered their extermination.Extermination was seen as the only solution to the growing conflict betweenElephants and farmers expanding into territory where they had once roamedfreely. A professional hunter was hired. One by one, some 120 Elephants werekilled. By 1919 only 16 were left. Butthis tiny band held out, hiding in impenetrable thorn thickets. After twelveyears of intermittent incidents, the government gave in and in 1931 proclaimedAddo an Elephant National Park. Eleven Elephants had survived the campaign.” Page 124 Africa’s Elephant

Today theAddo National Elephant Park is home to nearly 500 Elephants in the main Parkand on the adjoining Nyathi Concession, on which RiverBend Lodge is situated.What struck me, after reading Africa’s Elephant, was the enormity of ourresponsibility. Even more so when examined in the light of what is happening toRhino’s today. At RiverBend Lodge we take our responsibility seriously. Lemon Puree recipe - for Smoked Salmon!

Here is another of Chef Jonathan's personal additions to create a great burst of flavour.

Lemon Puree

Ingredients

6 lemons - remove the rind with pith
160g Castor Sugar
100g olive oil
100g water
pinch of Turmeric for colour

Method

Place Lemon rind with the white pith into a saucepan, bring to boil and simmer for 1 minute. Strain off water, cover with more cold water and repeat the process 5 - 6 times until tender to the touch. (The purpose of this is to boil out the bitterness from the Lemons).
Place the Lemon rind into a blender, blend until smooth, add sugar, water, and turmeric. Blend until smooth. Transfer to a squeezy bottle and refrigerate.

Recipes to enhance your New Year Lunch

Our Executive Chef, Jonathan Hodder has some suggestions for you to take your New Year Lunch to a new level - should you have either Parma Ham or Smoked Salmon on the Menu....!

Parma Ham and Pea Mousse with Crispy Egg - the Pea Mousse Recipe

Ingredients:

3 egg yolks
10g flour
120g milk
150g frozen peas
35g egg whites
50g whipped cream
2 leaf gelatine (soaked in cold water)

Method:

Put on milk to boil gently, whisk egg yolk and flour together - whisk until smooth. Add a little of the hot milk to yolks, whisk and add back to remaining milk. Using a spatula, cook out the milk and eggs until smooth and thick custard......allow to cool.
In a blender, blend peas whilst frozen (to keep the bright green colour). When the peas are broken down add the cool custard and blend until smooth and pass through a sieve. Melt the gelatine in a pan with a touch of water - be careful not to burn the gelatine.
Whisk egg whites and cream, add first the egg whites to pea custard and fold in gently...followed by the cream...and once completely folded in...refrigerate until set.
Makes 10 - 15 portions.

Jonathan Hodder - new Exeutive Chef at RiverBend Lodge

As promised - we would like to introduce you to our new Executive Chef at RiverBend Lodge, Jonathan Hodder.

Jonathan is married to Vicki and they are expecting their first child in January. Born and raised in Dorset, England, Jonathan has worked in some highly rated establishments. He began his career aged 16 and, before leaving England to move to South Africa with his wife, was the Sous Chef at Alan Murchison's resturant Paris House (which got a Michelin Star within one year of opening), having previously worked at The Queen's Square (Head Chef), Labercasse (French for Woodcock) and L'Ortolan (in Reading, Berkshire) amongst others! Jonathan relates an interesting story about the name L'Ortolan. An Ortolan is a rare bird which, whilst migrating in France, was caught in long nets and served up as a delicacy - eaten bones and all.

Having also had a spell in the famous Fat Duck Resturant in Bray - Jonathan is sure to be serving up some 'Gastronomic Delights' to Guests at RiverBend Lodge. We look forward to keeping you updated with photographs, recipes and Jonathan's food and wine philosophy!

Jonathan replaces Adriaan van Niekerk who is leaving us on to go on an East African culinary adventure. All of us at RiverBend Lodge, and many of the Guests who have stayed at RiverBend I'm sure, wish you all the best Adriaan. Go well!

The Largest Elephant in Addo National Elephant Park

This is the largest Elephant in the Addo National Elephant Park...and he goes by the name of Vali Moosa.
He has been rather solitary of late, but has just come into musth and has joined up with one of the herds.
Vali Moosa is one of the bulls brought in from the Kruger National Park - and perhaps we are witnessing the birth of yet another 'legendary' Elephant in the Addo National Elephant Park, following in the footsteps of the one and only Hapoor. Incidentally this photograph was taken at the waterhole named after his illustrious predessor!
Our Guides at RiverBend Lodge will be more than happy to take you on a drive through the main section of the Addo National Elephant Park. RiverBend Lodge is situated on a Concession area of the Addo Park - the Nyathi Concession, which is 14 000 hectares in extent. Our motto is "THE LUXURY OF CHOICE" - you choose! Three Banded Plover (Charadrius tricollaris) album

Finding the nest of the Three Banded Plover is no easy task....so the nesting part, unfortunately, is not included in this album.

The chicks in these images are really tiny - I would imagine one could fit one into a matchbox!!

It brings me great pleasure to be able to share these images.....and after having spent so many hours with these little birds I am reminded of the wonder's of this Creation.

Summer Avian Visitor's to RiverBend Lodge

Throughout summer we have visits from Migratory Birds. Today we feature one of these - the Forest Buzzard.

FOREST BUZZARD Buteo trixonatus

"Sexes - alike. Difficult to seperate from slightly larger (and usually darker Steppe Buzzard). Key feature seperating the 2 species are the blotched or streaked (not barred) underparts. Juvenile - more mottled above than adult, underparts heavily streaked or blotched. STATUS: Generally uncommon; only at a few localities with Afromontaine forest." (Roberts Bird Guide)

We hope to bring you an image of a Steppe Buzzard within the coming weeks.

Other Migratory Birds to look forward to include the brightly coloured European Roller and the beautiful Eastern Red Footed Kestrel also called an Amur Kestrel. They are normally here in late summer.

Elephant Family Group at RiverBend Lodge

The largest Elephant in this Family Group image is one of the males brought in from the Kruger National Elephant Park to increase the gene pool of the Elephants in the Addo National Park. Prior to importing these males all of the Elephants, in Addo National Park, were descendants of the original 11 Elephants which survived the slaughter of the Elephants in the Sunday's River Valley, which was halted in 1958. This photograph illustrates just how big he is - especially in comparison with one of the youngest members of the herd being protected between others of the Family Group. The baby was visible for just a few seconds before being drawn back into the safety if the Group.

Paul McKinley sent us an image of a Malachite Kingfisher (Alcedo cristata) which inspired us to work together to capture some images of this small, beautiful and elusive bird. We went out on a mission. We got the Malachite......but we didn't bargain on getting an African Pygmy - Kingfisher!!!! (Ispidina picta) The smallest South African Kingfisher. The pinkish purple colouring distinguishes the African Pygmy from the Malachite. (With thanks to Joe Pringle - one of our extremely dedicated team of Guides at RiverBend Lodge).

The Big Burger Debate!!

At lunch over the weekend, one of our Guides ordered one of our Kudu Burger's from the lunch menu. The arrival on the table, his obvious enjoyment of it's consumption and and the remark he made on completion sparked a big debate - how can one make a claim "Well that's the best Burger in the world...."! -and expect to get away with it! After much 'heated' argument, and counter argument, the rest of us got him to withdraw his bold statement and settle instead for a more modest "Well...if there is a better Burger in the world....I'd like to taste it"!!
We'd like to hear from our Guests what their opinion is..!

Whether it be the dazzle of Zebra

Nyathi Concession, without a doubt, now and forever

is a most beautiful sight.

It can be the flash of a Rhino

in the Spekboom hills

Or the danger of the Lions

when making their evening kills

Nyathi Concession, without a doubt

is home to excitement and thrills.

I love this Concession from the biggest game

to the smallest flower

whether it be from the tiniest vygie

to the Buffalo's power

Nyathi Concession will love in your heart, and a taste in your mouth

Today we feature some images of Kudu (Tregelaphus strepsiceros) taken at RiverBend.

Some argue that the Kudu is the most graceful of all the Antelope, and few will disagree. Shy and elusive - a good sighting is not an everyday occurrence. Getting good images is also not easy as they tend to be 'out and about' early morning or late evening, when the light is trickiest.

Males can weigh up to 270 kgs and stand up to 1,5 m. Average age 14 years. (Pocket Guide to Mammals of South Africa - Burger Cillie)

"Habits - Form herds of 2 - 12 animals, consisting of females and their young or males. In the mating season, an adult male is accompanied by a few females and young. Out of season, the males go solitary or form bachelor herds of up to 6 animals. Kudu graze in the early mornings or late afternoon, and rest in the shade during the day.Very timid and take off at the slightest sign of danger." (Pocket Guide to Mammals of South Africa).

Chef Sophy Bennet and her favourite Malva Pudding Recipe

Today we introduce you to one of the chefs at RiverBend Country Lodge - Sophy Bennett.

Sophy Bennett was born and raised in Addo. She is married to Andrew and they live in Nomathansanqa near the village of Addo, with their 4 children - the last 2 being twins. Apart from the influence of Chefs she has worked with at RiverBend, Sophy also picked up a lot of her skills from Dessie Price (now Botha), daughter of Wimbledon Single's Finalist in 1961, Sandra (Reynolds) Price. Dessie now runs a restuarant in Port Elizabeth - www.dessies.co.za

We caught up with Sophy whilst she was preparing breakfast, so unfortunately we don't have an image of her favourite recipe - featured below - but this is what some Guests were having after their return from an early morning Game Drive.

Sophy has worked at RiverBend Country Lodge for 11 years. Her favourite recipe is for Malva Pudding served with a Creme Anglaise and Ice Cream. Decadent and delicious.

Here is her recipe:

Ingredients:
Butter                          30mls or 2 Tablespoons
Apricot Jam                 15mls or 1 Tablespoon
Egg                             1
Sugar                          125 mls or 1/2 cup
Milk                             125 mls or 1/2 cup
Bicarbonate of Soda     5 mls or 1 Teaspoon
Vinegar                       15 mls or 2 Teaspoons
Pinch of salt
Cake Flour                  250 mls or 1 cup

Cream the butter and sugar together.
Beat in the egg yolk - get it light and fluffy
Disolve the Bicarb in the milk
Add the milk to the creamed mixture, alternating with the flour and salt which have been sifted together.
Lastly add the vinegar and stir.
Pour the mixture into a rounded dish. Bake - with lid (or foil) for 45 minutes to 1 hour.

Sophy likes to serve the Malva pudding with a slight twist to the Creme Anglaise in that she adds a bit of Liquer - try any of your favourites.

Cape Chestnut in Flower at RiverBend Lodge

The Cape Chestnut Calodendrum capense (Wlidekastaiing) is described in "Tree's of Southern Africa" (Keith Coates Palgrave) as "a small to tall tree varying from 7 to 20 m in height, depending upon the habitat..".
This beautiful specimen (at least 20 m high) is currently in bloom - and makes for a glorious sight against the backdrop of the Rooiwalle.
We will bring you more of the great specimens of the various tree's on RiverBend and the Nyathi Concession of the Addo Elephant National Park.

"South Africa's Spiders need all the friends they can get. Thousands are killed every yearsimply because they look scary, when in fact most are relatively harmless. Fortunately, an unlikely expert has spent most of her working life studying - and championing - these facinating creatures" Scott Ramsey writing in the Autumn Edition of WILD magazine.
All of these photographs were taken in the garden at RiverBend Lodge. There are many more species which I hope to capture.
The expert referred to by Scott Ramsey is Ansie Dippenaar who is the Curator of the South African National Collection of Arachnida at the Agricultural Research Council in Pretoria.
Some interesting facts about Spiders. The one which really caught my eye was the fact that "there has never been a recorded death from a Spider bite in South Africa". (Ansie Dippenaar)
"Spiders are the seventh most diverse group of organisms in the world. There are 170 000 estimated Spider species of which 40 000 are currently described. There are 2 000 specise in South Africa of which 1 054 are endemic" (WILD Magazine Autumn 2011)

Avril, a Matriarch Elephant

The area of land around RiverBend Lodge was incorporated into the Addo Elephant National Park in 2004 . This area is now known as the Nyathi (isiXhosa for Buffalo) Concession and is approximately 14 000 hectares in extent.
The Elephant herd which now wanders the Nyathi Concession was relocated by closing the main road between Addo and Paterson and opening the fences between the two sections - the Addo Elephant National Park and the Nyathi Concession. The herd was merely (although a difficult and well planned and executed process) moved across the road. This herd originally numbered 67 Elephants and the Matriarch was an Elephant named Avril.
Avril died in July of 2010 - with all of the herd in close proximity.
Two of the words I would use to describe Elephant behaviour are 'discipline' and 'respect' (both words which are fast becoming meaningles in our human society) - and the following story, which I witnessed, illustrate this perfectly.
In February of this year I was taking photographs of the Elephant herd walking from RiverBend Lodge towards Long Hope Villa and I was parked not far from the now dried remains of Avril, which were on my left. The Elephants came up towards me (from my right - with RiverBend Lodge in the background ) in groups and upon reaching the remains of the Matriarch, stopped and touched the remains with their trunks. Once they had touched the remains, many of the older Elephants also swung their trunks over the bones in a slow circular fashion and then swinging the trunk towards themselves as if making (or receiving?) some kind of blessing Some of the younger Elephants attempted to walk past the remains but were immediatly prevented from doing so by the older Elephants, and not allowed to move on until they had 'paid their respects'!
Observing this behaviour was indeed both a privilege and at the same time extremely thought provoking experience - something I will never forget.
I was fortunate enough to get photographs (unfortunately I only had a 300mm lens, so could not capture the 'wide' scene) of this 'ceremony'.

We had other plans for today's blog - however the sight of a herd of Buffalo in front of RiverBend Lodge just had to be shared. Aherd of Bufalo - with 2 recently born calves made their appearance this morning. As quickly as they arrived so they disappeared. Africa.
This reminded me of a quote from Hemingway's last book "True at First Light" - "In Africa a thing is true at first light and a lie by noon and you have no more respect for it than the lovely, perfect weed fringed lake you see across the sun baked salt plain. You have walked across that plain in the morning and you know that no such lake is there. But now it is absolutely true, beautiful and believable".
Yesterday we brought you the newest additions to the Elephant herd - today we are happy to bring you the newest additions to one of the Buffalo herds.

The Youngest Member of the Herd!

Our guides have established that this is the youngest member of the Elephant herd on RiverBend.

Fortunately we could get a clear shot to show you - there is normally a member of the family between such a young calf and these 'intrusive humans' - so photographs like this take some patience. Incredible to think that something so small becomes so big!

Summer's arrival

Summer announced it's arrival on Sunday and Monday - two day's of temperatures in the mid to higher 30's (Celsius).

We took some close up images of the Elephants celebrating the warm weather with a swim. They come out of the water nearly pitch black. But the colour we are more accoustomed to is soon restored with a mud bath and some dust!

Lions - kill an Ostrich on her nest!

The Lions were in the region of where our Staff live last night and so the Guides were able to take our Guests, early this morning, to see what had transpired after all the noise.

The Lions had killed an Ostrich on her nest. These are some images of the Lions, nest full of eggs which remained, Guests and the first to arrive to start with the 'clean up'. (A White Necked Raven)
There was an unusually good experience for our Guests this morning as the Elephants were browsing on the North side of Wolwekop and they were able to see two of the Big Five at the same time.
We experienced the first real day of Summer yesterday where temperatures climbed to the region of around 37 Deg Celsius!

Game Drive

I had the privilege to go on a game drive with guests over the weekend; as Executive Chef I do not get to go on game drives nearly as often as I would like to. Shortly after leaving the lodge we found ourselves in the middle of a breeding herd of elephants; good news for those of us who love cute, cuddly and awkward baby elephants! We saw the three 3-week old calves and to watch their interaction with the rest of the herd and how protective all the females were, was beyond amazing.

As we continued with our drive, the general game viewing was excellent; Red Hartebeest, Zebra, Warthogs and Ostriches to mention but a few. We also saw a Golden Orb Web Spider. It’s not the largest of its species, but makes the largest and strongest web. It gets its name from the golden colour of its web.
We stopped for sun-downers at a section named Valley View. It is a quiet peaceful location in an area of outstanding natural beauty. The views of the surrounding valley from this idyllic location were stunning and photographs do not do it any justice.

On our way back to the lodge we saw a herd of African Buffaloes. They were happily grazing and after noticing us they ambled away out of sight without any concern. The game drive left me with a renewed passion and love for the bush.Come spend time at RiverBend Lodge and experience the natural beauty and exquisite game of the Addo Elephant National Park.

This month we were lucky enough to host renowned German actor Soenke Moehring, who has starred in a number of well-known movies, his latest being ‘Inglorious Bastards’ where he acted alongside Brad Pitt. He has recently finished filming his next big movie with Ewan McGregor and Naomi Watts, based on the true story of the disastrous Tsunami that hit Thailand in 2004. Needless to say, we were all quite star-struck and really enjoyed his great sense of humour.
He left us with very positive words: “Great People, Great Food, and Great Animals; should be called Heaven’s Lodge.”

Cooking demonstration

Tantalize your taste buds and take your love of chocolate to a new level at RiverBend Lodge. Executive chef Adriaan held a cooking demonstration for guests and showed them how to make a fabulous chocolate mousse cake with hand-made chocolate truffles.

Fun was had by all as chef Adriaan shared his recipes, cooking techniques and tips to make the perfect chocolate mousse cake for a dinner party.

The demonstration was held on our western veranda over looking the waterhole. After the demonstration guests sipped on refreshing ice tea and enjoyed smoked salmon & onion marmalade quiche, cucumber sandwiches, cheese platters and the decadent chocolate mousse cake that they just learned how to make.

Guests were then treated to a game drive and spent time with our herd of elephants as the splashed around the waterhole spraying water everywhere.

Cooking demonstrations will become a regular event at RiverBend Lodge.

Chocolate and Hazelnut Paste Loaf Cake

With valentines day approaching fast, how can one not indulge in a bit of chocolate. Eating chocolate is a fine excuse for self indulgence and frivolity and a good piece of chocolate is a delight to the senses and provides your soul with joy.
Here is my recipe for an extremely delicious dense Chocolate and Hazelnut Paste Loaf Cake

225g unsalted butter
375g treacle sugar
2 eggs
1 teaspoon vanilla paste
30ml hazelnut paste
100g dark chocolate (melted)
200g cake flour
5ml bicarbonate of soda
30ml cocoa powder
½ teaspoon salt
250ml warm water
Preheat the oven to 180C.
Line a loaf tin with parchment paper.
Cream the butter and sugar for 3minutes on medium speed. Add the eggs one at a time, making sure each one is mixed in well.
Add the melted chocolate, hazelnut paste and vanilla paste.
Sift together the cocoa, cake flour, salt and bicarbonate of soda. Add this to the chocolate mixture. Add the warm water right at the end; ensure that all the ingredients are well incorporated.
Bake for 45minutes or until a skewer comes out clean.
Leave the cake in the loaf pan until it has completely cooled down.
Enjoy with some whipped cream and a bowl of strawberries.

Rain At Last

The River Bend plains have been converted from dry, thirsty bushveld to evergreen, lush terrain, rivers are flowing and dams are full! Needless to say the animals as well as humans are all jumping for joy after the 80 odd mils of rain we had during the last few days! Sightings of the European Rollers continue to mesmerize our guests as well as the latest exciting find – the very illusive honey badger! Once spotted by Joe and his guests after a nasty run-in with a porcupine and then again with pups in her mouth – which is great for us as hopefully we will be seeing more of this magnificent creature. We hope the rains come again to relieve the intense February heat but for now we are enjoying the green plains over run with game!

Vanilla Iced Coffee

There is no need for you to sacrifice your cup of coffee this summer. Iced coffee is the perfect cool-down beverage when sitting on the veranda at RiverBend Lodge watching the animals at the watering hole.

Here is my recipe for the perfect Vanilla Iced Coffee:
600ml strong filter coffee
150ml milk
150ml cream
5ml vanilla paste
5teaspoons sugar
Add all the ingredients together whilst the coffee is still hot. Mix thoroughly and place in the fridge to cool. Use your favorite coffee beans when making your coffee and adjust the amount of sugar to your taste.
Serve the chilled vanilla iced coffee in a tall glass with ice cubes and enjoy!

Rooibos Milktart

Here is the fabulous recipe for our Rooibos Melktert as on the dinner menu at RiverBend Lodge.

Rooibos Melktert

2cups milk

½ cup white sugar

40ml corn flour

15ml cake flour

2 eggs

45ml butter

2 Rooibos teabags

Heat 1 cup of milk on the stove with the teabags. When boiling, remove from the heat and let infuse for 10minutes. Remove the teabags and bring the milk back to the boil.

Mix the other cup of milk with the sugar, corn flour, cake flour and eggs.

When the Rooibos flavored milk is boiling, add the mixture whilst continuously whisking. Cook the mixture over medium heat for 3 minutes until thick.

Remove from the heat and stir in the butter.

Pour into your prepared pastry case and sprinkle with ground cinnamon.

Let set in the fridge for 2hours before serving.

Pastry case:

1 roll ready made puff pastry

1 medium size round pastry dish

Prepare the tin by rubbing with butter

Take your defrosted puff pastry and roll it out on a floured surface. Cut a round piece of pastry big enough the fit in your pastry baking dish, ensuring you have abig enough piece to cover the sides too. Place your pastry dish in the freezer for 2hours before baking. Bake the pastry case at 180°C until golden brown. Remove from the oven and cool down. When cooled, start to prepare your Melktert filling.

Swimming Elephants!

The young elephants at RiverBend love swimming. They play in the water with wild abandon; climb about on the older group members and splash back in the water. Whole bodies disappear under the water and just the small trunk will peep out to take another breath. When watching the animals in the water, one is reminded of the sheer beauty that is RiverBend and the magic of the Addo Elephant Park. Come visit us to experience this first hand!

Going green with our own vegetable gardens

Samuel Vena works as a chef at Longhope Villa. He has taken it upon himself to start an organic Vegetable and herb garden for RiverBend Lodge. Several areas around the RiverBend gardens have been transformed into little vegetable patches that guests can wonder through. We also started our own compost heap using organic/vegetable waste from the kitchen and garden, aiding us with our organic ‘farming’.

Organic produce has become increasingly popular over the last couple of years as consumers have become more aware of the health benefits of eating organic foods.A major concern has been the pervasive use of pesticides in farming and the hazardous presence of the pesticides residue in food.

Having our own organic vegetable garden is not only healthy, but it is also very satisfying picking your own vegetables and herbs and using it in the kitchen, knowing that it is the best quality product. To name but a few of our home grown treats: turnips, leeks, celery, spinach, rocket, lettuce, cabbage, sweet potatoes, carrots, parsley, mint, spring onion, and many more.

European Roller (Coracias spatulatus)

Most of our migrant birds have arrived in larger numbers than the previous year due to the good feeding conditions. Along with the butterflies, the insects have also become numerous and they have attracted the attention of many of our summer visitors. This is most apparent in the European Rollers (Coracias spatulatus) that have been especially abundant this summer. These stunning birds tend mainly to hunt by still-hunting from a perch and then pouncing on their prey on the ground. This species is also a non-breeding Palearctic migrant which means this bird comes from as far away as North Africa, Europe and parts of Asia. These birds make for fantastic photo opportunities and are yet another beautiful species to look forward to when heading out on game drive into the magnificent scenery that is RiverBend Lodge.

Smoked Paprika baked Kingklip with sautéed butter beans, parmesan dusted aubergine, slow roasted cherry tomatoes and caper cream.

Smoked Paprika baked Kingklip with sautéed butter beans, parmesan dusted aubergine, slow roasted cherry tomatoes and caper cream.

Fish:
200g Kingklip fillet
½ tsp Smoked Paprika
Salt
Pepper
½ tsp live oil
Season the fish, rub with oil and bake in the oven till cooked.

Butter Beans:
½ cup of cooked butter beans
1tablespoon diced onion
2 sprigs thyme
Salt
Pepper
1 teaspoon butter
Add all the ingredients in a pan and sauté for 4minutes.

Aubergine:
1 slice aubergine (2.5cm thick)
Salt
Pepper
Dried herbs
Season the aubergine with the salt, pepper and dried herbs.
Dust in flour, dip in beaten egg and roll in breadcrumb parmesan cheese mixture.
Shallow fry on both sides over medium heat until cooked.

Caper cream:
1 tablespoon capers
1teaspoon butter
100ml cream
Salt pepper
Fresh thyme
Place all the ingredients in a pan and cook for 5minutes.

Enjoy!

RiverBend expands its game viewing to include even larger mammals!

On Tuesday 31 August a group of guests accompanied by their Riverbend guides took the ocean off Port Elizabeth in search of the majestic whales that calve in Algoa Bay between July and October. We were in search of two species of whales that pass by the waters of Port Elizabeth whilst breeding and calving. Humpback whales (megaptera novaeangliae) pass the bay from June until August on their way to their breeding and calving grounds off East Africa and return with their calves from October until the first week in January. Southern Right whales (eubalaena australis) start arriving in the bay during July and leave by the end of October. They calve and mate within the protection of the quieter waters of the Bay.

We were able to locate a Humpback whale and its calf within 30 minutes of leaving the Port Elizabeth harbor. This was a great opportunity for the guests to get close up footage of these two whales and while they were taking photos a pod of bottlenose dolphins (tursiops trancatus) also appeared and were swimming around the whales while jumping and playing amongst themselves.

We then continued towards our destination, St Croix Island where South Africa’s largest colony of African Jackass Penguins (spheniscus demersus) can be found. Amongst these comical penguins we also found African Black Oystercatchers (haematopus moquini), Cape Cormorants (phalacrocorax capensis), White-Breasted Cormorants (phalacrocorax lucidus) as well as Subantarctic Skuas (catharacta antarctica) that were hovering above the boat.

We then headed back towards the Port Elizabeth harbor and were lucky enough to encounter a Bryde’s whale (balaenoptera eden) as well as a Humpback Dolphin (sousa plumbea). Both these species are not often seen so it was with much excitement that these two species were observed.

The experience of not only observing the land mammals of RiverBend Lodge but also those found off our coast was certainly a memorable one. This is yet another example of the kind of well-rounded safari guests can look forward to when staying at RiverBend Lodge.

African Green Pigeon (treron calvus) visits RiverBend Lodge

The African Green Pigeon, although common in the Eastern parts of South Africa, is certainly not a regular sight around these parts as its range only extends down as far South as East London according to the birding maps. In fact it does not even appear on the official Addo Elephant National Park bird list. Therefore there was much excitement around the lodge when one of these beautiful pigeons decided to spend the day in the lodge gardens.

They are usually gregarious, all in small groups, which is also makes the sighting of only a single bird rather unusual. They forage in trees, flapping to keep their balance, and often hanging upside down. As you can see in the photo their green plumage makes effective camouflage. When in flight these birds tend to fly straight and direct. These birds being fruigivores would find plenty of fruit bearing tress in the Afro-Montane forests found on the Southern facing slopes on our concession within the Addo Elephant National Park.

Bearing that in mind lets hope to see more of these eye-catching pigeons in the future!

Sad Farewell

This month we had to bid sad farewell to Marius and Lorraine Malherbe.

They had an immense impact on the lodge and because of their hard work, dedication and vision; RiverBend Lodge became what it is today. The two of them have left quite a gap here.

All of us at RiverBend Lodge will be forever grateful for having had the opportunity to have worked with them. We do not have any shortage of memories; we will miss their guidance, support and encouragement. Most of all we’ll remember them for being great friends.

We wish them the best of luck with the new phase of their lives.

Brilliant birding by far..

The last month or so has been absolutely fantastic in terms of bird sightings here at RiverBend. We have managed to sight birds of all shapes and sizes, and not just deep out into the concession, also just around the lodge itself! One of the most interesting sightings of them all was without a doubt the Cape Vulture (Gyps Coprotheres) we had circling over the lodge. We had the opportunity of watching this particular Cape Vulture move off swiftly into the distance, circling all of the valleys in search of something to pick at!

Absolutely amazing!

We have also had a Martial Eagle (Polemaetus Bellicosus) , although juvenile, hanging around the waterhole right in front of the lodge. The vervet monkeys that use the surrounding acacia trees to roost in have been in an utter state of panic because of this Martial Eagle! Any monkey remaining blissfully relaxed and unaware of a hungry Martial Eagle circling overhead is a sure target!

In the riverbed just behind the lodge, I have also been able to sit and watch a Brown Hooded Kingfisher swoop down from a perch above the water to catch insects.

Sightings of the really little Golden Breasted Bunting have also been quite popular of late. The call of the Red Necked Francolin at dusk and then finding the francolins early the next morning digging in some elephant dung for insects and worms.

Knysna Loeries (Turacos) have been gracing us with their presence in the afro montane forests.

The weavers have also started stringing reeds together in the waterholes with nesting material in order to build nests for the breeding season. The Cape Weaver and Masked Weaver in particular.

I had a fantastic opportunity to photograph a Grey Headed Bush Shrike (Malaconotus Blanchoti ) that was not in the least bit fussed by our presence!

In the evenings when returning back to the lodge from my successful safaris, I have also had the opportunity to sit with some very relaxed Spotted Eagle Owls (Bubo Africanus).

There is also a trio of African Spoonbills that often fly overhead just 5km or so east of the lodge and often settle at a very well hidden waterhole. These magnificent birds allow us to sit quietly and watch as they wade through the shallows of the waterhole in search of an early breakfast.

Seasons are soon to change again, and with the season change, so a change in bird life and activity. Keep an eye out for more on these fascinating flappers!!!!

Things are starting to change here in the Addo Elephant National Park as the seasons change. Whilst the migratory birds are surely planning to head back to their foreign homes, the elephant sightings have been out of this world! The main herd consisting of 65 or so individuals have brought along with them yet another 2 new little calves and ofcourse a handful of fantastic interaction!! Our resident aardvark has also decided to reappear along with loads of porcupine with young and striped polecats in their numbers! Wez

My guests are into their third day here at Riverbend and we have seen more elephants than we had even hoped to see!! On drive this morning, not even half an hour after heading out, we stopped at a river crossing to see what a troop of vervet monkeys were alarm calling for!! We were discussing the possibility of a caracal that we had just seen crossing the road ahead of us being the cause of all the comotion, but could not see anything in the direction that the monkeys were looking. My guest (Christo Botma) then asked me what was ahead of us on the road... it was a herd of (+ -)50 elephants, including suckling calves, heading straight towards us! What an incredible sight! Every one of the elephants went down into the riverbed below us in search of water and we had the most amazing arial view of them. It was an entirely different feeling being able to view them from that angle. We waited until all the elephants had moved off and continued with a very successful drive.

After having a fairly peaceful drive yesterday afternoon and easing my guests into their stay at Riverbend for six nights, we decided to go looking for lions and elephants this morning. About half an hour into the drive we were in luck! Neither elephant nor lion, but seven bat eared foxes sitting in the middle of the road soaking up the morning sun! What an incredible sighting!! Only after a few minutes did they decide to take off into the thicket, giving us a fantastic oppurtunity to view them and their behaviour and not so long after that, we once again ran into some luck and bumped into a huge male lion that appeared out of the thicket to our right and crossed the road about fifty meters ahead of us. He moved a further fifty meters off the road and lay down completely flat cat!! We sat with him for about an hour before moving on. A successful drive even without elephants..I'll save that for tonight. Have a good evening all..

Hi all! The beginning of this winter has brought some amazing sightings for us all at RiverBend. I had a trio of british Lions supporters on drive with me yesterday afternoon. It was an excellent drive to say the least. Sightings of numerous antelope species, a very relaxed vervet monkey troop, a pair of Lanner Falcons harrassing a pair of Ravens and an absolutely incredible sun set! To top it all off, we got to spend an incredible twenty minutes with three striped polecats scurrying about and interacting just after sunset!! Wow, it was fascinating!!
